Where do I go to find the natural PH of grains?
Where do I go to find the natural PH of grains like Long Grain White Rice? I am looking to find the acidity/alkalinity of certain grains. Does the PH vary on the same grain, like rice, by the soil, fertilizers, and water?
You could test the pH with litmus paper.
According to the first source below, the pH of brown rice is between 6.20 – 6.80, and white rice is between 6.00 and 6.70. A pH of 7 is neutral, so brown rice is very slightly acidic and white rice is a tiny bit more acidic than brown rice.
Rice (all cooked)
Brown 6.20 – 6.80
Krispies 5.40 – 5.73
White 6.00 – 6.70
Wild 6.00 – 6.50
Yes, the pH of rice would vary with different soil, fertilizer, water and variety of rice.
As an interesting aside, the tomatoes that our grandmothers might have canned were more acidic than the tomatoes commercially available to us today. As a result, some of the canning recipes that our grandmothers might have used won’t work well with today’s tomatoes.
This web site: http://www.energiseforlife.com/food_ph.php has lists of pH values, too, but these are not the pH values of the foods, but supposedly the pH values for the ash left behind after the foods were incinerated. The pH values on this site seem to be extreme (-38 for pork ash??). I’m not familiar with the pH values of incinerated foods, but the pH value of lye (used in drain cleaner) is 13 (which is alkaline) and the pH value of stomach acid (which burns your throat) is 1, so the pH value for the pork ash given on this site suggest that the ash would be an extremely dangerous acid to touch (flesh would liquefy on contact). Perhaps I just don’t understand what the pH values given on this site are supposed to represent. Don’t use them.
