Old Fashion Comfort Food Recipes: Corn Pone Pie and a Macaroni-Tomato Casserole

The Corn Pone Pie is very economical, goes together quickly, contains meat, vegetables, and grain all in one easy dish. The Baked Macaroni Casserole is a tasty macaroni and tomato casserole that combines grains, vegetables, and dairy in one dish.
CORN PONE PIE
1 lb hamburger meat
1 onion, medium size
1 cup tomatoes
1 cup red beans
1 or 2 mangos*
1 tsp chili powder
1 cup corn meal
1/2 cup flour
Chop the onion and brown in a skillet with the crumbled hamburger meat. When meat is browned, drain off excess fat. Add the tomatoes, beans, mangoes; stir together to blend. Leave mixture in skillet if skillet is ovenproof. Otherwise transfer to a casserole dish or baking pan.
Mix the corn meal and flour with enough milk to make a corn bread consistency mixture; pour over top of the other ingredients and bake at 375 degrees until the cornbread topping is done.
*Mango is a green bell pepper in the Midwest. I never knew there was a fruit called mango until I was an adult living in the West! Don’t use the real mango in this recipe. This recipe refers to green bell pepper.
BAKED MACARONI CASSEROLE
1 pkg (8-oz) elbow macaroni, cooked according to pkg directions, drained
3 tbsp butter
6 tbsp flour
2 cups tomatoes
1 tsp salt
1 onion, finely chopped
1 egg, beaten
1 1/2 cups creamed cottage cheese
1/4 tsp fresh ground black pepper
1/4 cup crushed cornflake cereal
2 tbsp melted butter
Preheat oven to 350 degrees.
Butter casserole dish.
Melt the three (3) tablespoons of butter in a saucepan. When completely melted, blend in the flour and cook over low heat, stirring constantly until lightly browned. Remove from the heat; add the tomatoes, salt, onion, egg, cottage cheese, and black pepper. Mix well then pour the mixture over the cooked and drained macaroni. Stir slightly to distribute evenly. Pour the mixture into the prepared casserole dish. Sprinkle the cornflake crumbs over all and drizzle with the butter. Bake at 350 degrees for about 45 minutes or until bubbly and heated through.
